Lourdes M Diaz-Tenorio
Summary
Lourdes Mariana Díaz-Tenorio, since 2011, is a professor and researcher from the Biotechnology and Food Sciences Department at The Technological Institute of Sonora (ITSON). She holds a Doctorate and Master's degrees in Sciences in the Use, Management, and Preservation of Natural Resources. She ran two postdoc positions, one at Almería University in Spain and the other at the Center of Research in Food and Development in Mexico; those studies were related to fish enzyme digestion related to starvation/feeding and the crustacean meat quality measurement. Dr. Díaz-Tenorio is an active member of the Biotechnology and Bioengineering Mexican Society, The International Association for Biological Oceanography, and a member of the National System of Researchers of Mexico. To create the Aquatic Species Biotechnology Laboratory, she has obtained financial support from the National Council of Science and Technology and the Program for Teacher Professional Development from Mexico. From this laboratory, at least thirty research theses (B. Sc., M. Sc., and Ph. D.) have been developed. Mariana studies the effects of pre-mortem/pre-harvest factors on food quality and invertebrates enzymatic digestion.
